Raised in the pristine waters of Japan's Goto Islands, Hashiguchi Hamachi represents the next generation of premium farm-raised yellowtail. Through years of research and proprietary farming techniques, Hashiguchi Suisan has successfully extended the rich flavor and high fat content typically associated with winter yellowtail, making it available throughout the year.

Fed with a specially developed diet and carefully raised in the clean waters of Nagasaki, Hashiguchi Hamachi offers exceptional marbling, over 150% more free amino acids (umami) than wild yellowtail of the same season, minimal fishy odor, and outstanding color retention. Even after 48 hours under proper refrigeration, the bloodline maintains its fresh appearance, making it an ideal choice for premium sushi and sashimi programs.

Its remarkable cost performance is another advantage. A 4 kg Hashiguchi Hamachi delivers a level of fat content and umami comparable to a 6 kg or larger wild winter yellowtail, providing chefs and seafood distributors with exceptional quality, consistency, and value throughout the year.
