Hakuju Madai Zero is an innovative premium Japanese red sea bream developed by Akasaka Suisan in Ehime, Japan. Unlike conventional aquaculture, it is raised on a specially developed fishmeal-free feed using plant-based protein, reducing dependence on wild-caught fish as a feed resource while maintaining the quality and flavor expected of premium Japanese Madai.
Building on Akasaka Suisan's original Hakuju Madai, the feed also incorporates white sesame, preserving one of the distinctive features of the Hakuju brand. The result is a clean, elegant sea bream with refined sweetness, a refreshing finish, and excellent freshness retention.

Traditional aquaculture still depends heavily on marine resources for feed. Akasaka Suisan developed Hakuju Madai Zero to address this challenge by eliminating fishmeal and replacing it with plant-based protein.
According to Akasaka Suisan, conventional sea bream production can require the equivalent of approximately 4 kg of anchovy as feed material to produce 1 kg of sea bream under the assumptions used in its calculation. Hakuju Madai Zero was created to challenge this dependence on wild marine resources and demonstrate a more sustainable approach to premium aquaculture.
Importantly, sustainability was never intended to come at the expense of taste. Feedback cited by Akasaka Suisan describes Hakuju Madai Zero as having an elegant flavor, clean aftertaste, and light yet satisfying character. The company has offered the fish commercially since around 2021 and reports positive recognition for its light sweetness and resistance to developing undesirable odors over time.
